Antibacterial effect on eggs washed with 0.05 % solution of Okhotsk Calcium F is equivalent or superior to that on eggs washed with a 150 ppm solution of sodium hypochlorite.
A specimen was produced by adding Okhotsk Calcium F and lye powder to noodle dough. The specimen was kept for 14 days at room temperature (25ºC) to observe development of mold and changes of pH. Okhotsk Calcium F was supplied as a 5 % solution (Okhotsk Calcium S), and added to the specimen so that it could be easily mixed into dough.

---|---|---|---|
Development of mold | pH | ||
25 g of Okhotsk Calcium F solution added*2 | 10.8 | N | 9.4 |
12 g of lye water (lye powder) added | 10.0 | Y | 5.7 |
*1 | Additives stated above were added to 1,000 g of flour and 10 g of NaCl. |
*2 | The actual addition of Okhotsk Calcium F is 1.25 g, since 25 g of 5 % solution is added. |
